Molten Lava Cake

Ingredients: – 4 ounces (113 grams) bittersweet chocolate, chopped – 1/2 cup (115 grams) unsalted butter – 1/4 cup (50 grams) granulated sugar – 1/4 cup (50 grams) packed light brown sugar – 2 large egg – 2 large egg yolk

– 1 teaspoon vanilla extract – 1/4 teaspoon salt – 1/4 cup (30 grams) all-purpose flour – Additional butter and cocoa powder for greasing and dusting the ramekin

Optional Garnishes: – Powdered sugar – Fresh berrie – Whipped cream – Vanilla ice cream

Preheat the Oven: – Preheat your oven to 425°F (220°C). Grease four 6-ounce ramekins with butter and dust them with cocoa powder, tapping out any excess.

Melt Chocolate and Butter: – In a heatproof bowl set over a pot of simmering water (double boiler), melt the chopped chocolate and butter together, stirring occasionally until smooth and combined. Remove from heat and let cool slightly.

Prepare Batter: – In a separate mixing bowl, whisk together the granulated sugar, brown sugar, eggs, egg yolks, vanilla extract, and salt until well combined.

– Gradually pour the melted chocolate mixture into the egg mixture, whisking constantly until smooth. – Sift the flour over the chocolate mixture and gently fold it in until just combined.

Fill Ramekins: – Divide the batter evenly among the prepared ramekins, filling each one about three-quarters full.

Bake: – Place the ramekins on a baking sheet and transfer them to the preheated oven. Bake for 12 to 14 minutes, or until the edges are set but the centers are still soft and slightly jiggly.

Serve: – Remove the molten lava cakes from the oven and let them cool in the ramekins for 1 to 2 minutes. Carefully run a knife around the edges of each cake to loosen it from the ramekin.

– Invert each cake onto a serving plate and gently lift off the ramekin. The center of each cake should still be soft and molten. – Dust the tops of the cakes with powdered sugar and garnish with fresh berries, whipped cream, or vanilla ice cream, if desired.

Enjoy: – Serve the molten lava cakes immediately, while they're still warm and gooey. Cut into the center of each cake to release the molten chocolate lava.
