Healthy Applesauce Muffins

Ingredients: – 1 1/2 cups whole wheat flour – 1 teaspoon baking powder – 1/2 teaspoon baking soda – 1/2 teaspoon salt – 1 teaspoon ground cinnamon – 1/4 teaspoon ground nutmeg

– 1/2 cup unsweetened applesauce – 1/2 cup honey or maple syrup – 1/4 cup unsweetened almond milk (or any milk of choice) – 1/4 cup coconut oil, melted – 1 teaspoon vanilla extract – 1 cup grated apple (about 1 medium apple)

Preheat the Oven: – Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or lightly grease the cups.

Mix Dry Ingredients: – In a large mixing bowl, whisk together the whole wheat flour, baking powder, baking soda, salt, cinnamon, and nutmeg until well combined.

Combine Wet and Dry Ingredients: – Pour the wet ingredients into the bowl with the dry ingredients and stir until just combined. Be careful not to overmix; a few lumps are okay.

Fold in Grated Apple: – Gently fold in the grated apple (and any optional chopped nuts or raisins) until evenly distributed throughout the batter.

Fill Muffin Cups: – Divide the batter evenly among the prepared muffin cups, filling each cup about two-thirds full.

Bake the Muffins: – Place the muffin tin in the preheated oven and bake for 18 to 20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

Cool and Serve: – Remove the muffins from the oven and let them cool in the tin for a few minutes before transferring them to a wire rack to cool completely. Enjoy the muffins warm or at room temperature.
