Cookie Butter Pie

Step 1: Gather Your Ingredient – 1 1/2 cups of crushed graham crackers or cookie crumbs (such as Biscoff cookies) – 6 tablespoons of unsalted butter, melted – 1 (8 oz) package of cream cheese, softened

– 1 cup of cookie butter spread – 1/2 cup of powdered sugar – 1 teaspoon of vanilla extract – 1 cup of heavy cream

Step 2: Prepare the Crust 1. Preheat your oven to 350°F (175°C). 2. In a mixing bowl, combine the crushed graham crackers or cookie crumbs with the melted butter. Mix until the crumbs are evenly coated.

1. Press the mixture into the bottom and up the sides of a 9-inch pie dish, forming a crust. 2. Bake the crust for 8-10 minutes, or until lightly golden brown. Remove from the oven and let it cool completely.

Step 3: Make the Filling 1. In a large mixing bowl, beat the softened cream cheese until smooth and creamy. 2. Add the cookie butter spread, powdered sugar, and vanilla extract to the cream cheese. Mix until well combined and smooth.

Step 4: Whip the Cream 1. In a separate mixing bowl, whip the heavy cream until stiff peaks form. 2. Gently fold the whipped cream into the cookie butter mixture until fully incorporated.

Step 5: Assemble the Pie 1. Pour the cookie butter filling into the cooled crust, spreading it out evenly. 2. Smooth the top with a spatula or the back of a spoon. 3. Optional: Garnish the top of the pie with whipped cream, chocolate shavings, or additional cookie crumbs.

Step 6: Chill and Serve 1. Cover the pie with plastic wrap and refrigerate for at least 4 hours, or until set. 2. Once chilled, slice the pie and serve cold. Enjoy!
